laurea in terapia occupazionale..e il tema della festa erano le
coccinelle...e lei le voleva associate alla torta che avevo già fatto
per mia cugina... ho voluto un po' modificarla...ed ecco a voi...<br />la
torta è per 40 persone circa, un pds da 9 uova e uno da 4, crema al
mascarpone e crema rocher, bagnata con latte e bayles..stuccata con
panna e decorata in pdz...decorazioni in pdz+cmc (e anche qui asciugarle
è stata un impresa!!!!...un umidità terribile qui a casa!)<br />
...io sono sono molto soddisfatta!!!<br />

nel tempo lei ha affinato la ricetta rendendola più morbida e arricchendola... e io ci ho messo del mio...<br />
Questa è l'ultima versione...del classico dei classici...<br />
3 uova<br />
230 gr di zucchero<br />
180 gr di farina<br />
50 gr di frumina<br />
1 bs di lievito<br />
3/4 di bicchiere di olio evo<br />
1 bicchiere di latte<br />
vaniglia/scorza di limone (la prima se aggiungete cacao, la seconda se lo lasciate bianco)<br />

Io monto le uova con lo zucchero, aggiungo alternandoli le farine con i liquidi, e poi in una teglia con il buco imburrata ed infarinata a 180° per 30-40 minuti...<br />
...e quasi quasi me ne vado a mangiarne un pezzo....<br />
<br />Marlene Rossettihttp://www.blogger.com/profile/06161090275567611995noreply@blogger.com0tag:blogger.com,1999:blog-2115089451280113219.post-80976294703035315722013-11-10T23:32:00.000-08:002013-11-10T23:32:37.142-08:00Torta cassetta degli attrezzi ....il tema è da grandi ma la torta è per un bambino....<br />...Per la precisione è il mio unico adorato nipotino!!!!!!<br />...appassionato a 3 anni di attrezzi da lavoro...e quindi perchè non fargli una cassettina degli attrezzi?<br />...fortunatamente la torta è andata senza particolari intoppi , se non per il fatto che ho dovuto prepararla contemporaneamente alla relazione per un congresso (che ho discusso lo stesso giorno giorno!!!)...<br />...sono davvero soddisfatta però!!!!e non potete immaginare la sua faccia quando l'ha vista!!!<br />...la torta è un pds al cioccolato (4 strati) farcita con crema al mascarpone e bagnata con latte e bayles, stuccata con panna e decorata con pdz... gli attrezzi sono di pdz e cmc (e stavolta non si sono asciugati perferttamente!!!) ...li ho ripresi da degli attrezzini di plastica da bambino che lui aveva (fotografati di nascosto!!!)....<br />
...dimenticavo!!..il coperchio della scatola è fatto dalla torta di Mars.....stuccata con cioccolato bianco fuso e raffreddato in modo da creare uno strato liscio che poi ho ricoperto con la pasta di zucchero!<br />

Premetto che:<br />
Una serie di contrattempi...una settimana pesante a lavoro ...l'ambulatorio di mezzo...una fatica immane...però...alla fine...sono molto soddisfatta!!!!..so che ci sono tante imprecisioni...che la torta ha sudato più di un maratoneta alla fine di una corsa...ma mi piace!!!!<br />
... e la faccia che hanno fatto gli invitati... mi ha ripagato di tutto il lavoro!!!!<br />
...breve riassunto:<br />
Torta da 100-120 persone...tema cucciolo... disponibilità frigo praticamente minima (da ambedue le parti)...come risolvere?<br />
...cupcakes!!!! e Cucciolo!? ... gli facciamo una tortina dedicata!!!<br />
Mi sono fatta costruire dal mio amato (che non smetterò mai di ringraziare) 3 tavolini da usare come supporto per cupcakes e torta...<br />
...e poi sono iniziati i contrattempi...la crema al pistacchio liquida... (gelatina aggiunta...ok...ma all'aggiungere della panna...liquefatta nuovamente...(fortuna ha voluto che il frigo risolvesse il problema!)..il pan di spagna troppo basso per i mieie standard e quindi ne ho dovuto fare un altro piccolo da integrare come strato di mezzo..<br />
...ci siamo persi per trovare il posto...quindi 1/2 ora in più di macchina...<br />
...in loco ho dovuto farcire e decorare i cupcake...1/2 ora prima di servirli perchè non c'era spazio in frigo...<br />
...un umidità mai vista prima che ha fatto sudare...torta e decorazioni (completamente asciutte prima!)...<br />
poteva essere uno spatascio assoluto...ma con un po' di fortuna e taaaaaaaanta collaborazione del mio aiuto pasticcere preferito...abbiamo portato a compimento l'opera!!!!!! Grazie Pierluigi!!!!<br />
Cmq si tratta di un pan di spagna al cacao (5+1 e 1/2 uova) con bagna al latte e cacao e crema chantilly al pistacchio, cupcakes con cuore alla nutella decorati con panna colorata e decorazioni varie..<br />

Primo lievitino:<br />
300 gr di farina manitoba<br />
1 bustina di lievito di birra<br />
150 gr di acqua tiepida <br />
<br />
Impastare bene e mettere a lievitare chiuso in una bustina da congelatore in frigorifero fino al mattino dopo.<br />
La mattina successiva impastare 300 gr di farina, 110 gr di zucchero, 2 tuorli d'uovo, 100 gr di burro fuso raffreddato, un pz di sale, vaniglia e 40 ml di acqua.<br />
Unire il lievitino tirato fuori dal frigorifero e impastare bene fino ad unire i due impasti.<br />
Lasciare riposare al buio per 1/2 ora, poi dividere l'impasto in 3 parti, ricavare i cornetti (o potete fare anche i maritozzi con lo stesso iimpasto) e mettere a lievitare per 2 ore.<br />
Spennellare con il latte e spolverare con zuccheo di canna o granella.<br />
Mettere in forno a 180° per 15-20' circa.<br />
Io li ho farciti con Nutella e marmellata di ciliege della mamma!! <br />

Detto anche torta americana o canadese è un dolce morbidissimo e buonissimo!! E' perfettto per la colazione e anche per la merenda....tiene benissimo fino a 4-5 dopo!!!...anche perchè finisce prima!!!!<br />

...Ho voluto sperimentare una base diversa, decisamente insolita...la famosissima RED VELVET!!!<br />
...inaspettatamente è una base molto buona, che se accompagnata con uno strato sottile di ganache al cioccolato bianco e bagnata leggermente (lo so che non andrebbe fatto!!) con latte è davvero buonissimaaaaaaaaaaaaaaaaaaaaaaaaaaaaa!!!<br />

<span class="bbc_color" style="color: navy;"><span class="bbc_size" style="font-size: 12pt;"><span class="bbc_font" style="font-family: comic sans ms;">Farina 00 330 gr<br />Zucchero 300 gr<br />Bicarbonato un cucchiaino<br />Cacao 2 cucchiaini<br />Sale un cucchiaino<br />Uova 2 a temperatura ambiente<br />Olio di semi 330 gr<br />Latticello 240 gr (io ho usato 120 gr yogurt magro 0,1 e 120 ml di latte scremato)<br />Colorante rosso<br />Aceto bianco un cucchiaino<br /><br />Scaldate il forno a 180<br />In una ciotola mescolate farina, zucchero, cacao, bicarbonato e sale.<br />In un'altra ciotola sbattete le uova con latticello, olio, colorante ed aceto.<br />La quantità del colorante decidetela da soli n base al vostro colorante.<br />Dovete ottenere un impasto di colore rosso vivo.<br />Unite quindi i due composti ed amalgamate bene.<br />Versate in due teglie, foderate con carta forno (o semplicemente di spray staccante) da 22 cm. (io ho usato una teglia quadrata)<br />Mettete in forno per 25-30 minuti ma fate la prova stecchino.<br />Lasciate intiepidire e sformate.</span></span></span><br />

torta vera è quella grande, fatta da un pan di spagna da 12 uova in
teglia da 30 cm, farcita con crema chantilly con gocce di cioccolato,
bagnata con latte e caffè, stuccata con panna e decorata con pasta dii
zucchero....<br />
Il piano di sopra è finto, una dummies rivestita e decorata con pasta di zucchero....<br />

nutella...ganache al cioccolato al latte e decorata con panna e pezzi di

...l'occasione era il secondo compleanno del figlio di una mia carissima amica...che adora questo cartone animato...<br />
avevo voglia di fare qualcosa di diverso dal 3D e dal classico 2D...e rimanendo estasiata dalle torte della mia amica Silvia (C.Vetta) delle Civette sul Souffle....ho deciso di prendere spunto dalle sue....facendo dei biscotti decorati da mettere sulla torta!!!...Ci ho messo più tempo a fare quelli che a fare tutta la torta!!!!!<br />

Niente di che, ma volevo portare un pensierino a mia zia per Pasqua, e non potendo fare le uova in casa (motivi tecnico-logistici), l'ho comprato e decorato in stile Thun ..tecnica che era una vita che volevo provare a fare!!!<br />
purtroppo non ho potuto fare foto passo-passo ma mi sono limitata al risultato finale..<br />
cmq per la cronaca ho spolverato prima di polvere dorata le superfici, poi ho usato il cacao in polvere per sfumare le intersezioni e le incisioni...<br />

...ho preparato un pan di spagna da 4 uova in teglia da 20 ...<br />
..tagliato in 4 fette e iniziato a disporre i vari piani ...pan di spagna+ crema+fragole affettate<br />
...praticamente sono usciti 2 tortini..e questo è il risultato!!<br />

Avevo finito i dolci per la colazione...e avevo voglia di fare qualche dolce lievitato...e ho sempre avuto voglia di provarli...non avendo crema pasticcera in casa...ho optato per la Nutella!!!<br />

ricetta:<br />

400 gr oo<br />
120 manitoba<br />
300 latte<br />
2 uova<br />
130 zucchero<br />
60 ml olio di semi<br />
60 gr fiocchi per purè (io ho usato 300 gr di purè che avevo)<br />
1 bustina lievito di birra.<br />
prima con il latte caldo si fa il purè, quando si è raffreddato ,si mette l' impasto nella macchina del pane,programma impasto,(il mio dura 1,50h), si stende la sfoglia,che deve risultare alta 1.5 cm,<br />
con un coppapasta tagliamo i cerchi, sovrapponiamo i cerchi un all' altro,bagnando i bordi con un po' di latte,<br />
lievitare ancora per 1 ora.<br />
in forno a 180 gradi per 15 minuti,(nel mio forno bastavano 170 gradi per 10 min)<br />
Riempirli a piacere.(io li ho farciti con la nutella prima di assemblare i due dischi)<br />

125 gr di burro<br />250 gr di zucchero<br />300 gr di farina<br />200 ml di succo d'arancia (la ricetta base prevede l'acqua)<br />2 cucchiaini di lievito<br />4 uova<br />gocce di cioccolato<br />
Montare il burro con lo zucchero e incorporare le uova una alla volta, quando ne avrete aggiunte 2, cominciate ad aggiungere anche la farina con il lievito e poi il succo, infine le gocce di cioccolato!<br />..io le ho stuccate con un po' di nutella e decorato con pasta di zucchero...<br /><br />..io
le trovo molto carine...certo...ho le mani troppo grosse per certe
decorazioni!!!..non so come fanno a decorare i confetti!!!<br />

...ecco la mia ultima...(colossale)...fatica!!!<br />
...mille ripensamenti...dubbi...pensieri...<br />
...l'occasione era quella del primo compleanno di un bambino..<br />
.sono stata molto tesa perchè ci tenevo a fare bella figura,<br />
tanto lavoro ma alla fine...sono molto soddisfatta!!!...<br />
...cmq lo so che le foto sono tantissime...ma ci sono talmente tanti particolari...che ve li volevo far vedere tutti!!!<br />
...ultimo ringraziamento a mia madre e a mia sorella...che mi hanno aiutato per le foglie, fiori e liane... mentre io dipingevo gli alberi...devo dire la verità...mi è piaciuta tantissimo tornare a dipingere!!!!<br />
Gli animali sono stati fatti con qualche giorno di anticipo in modo che asciugassero anche se non completamente in modo da adattarsi alla superficie della torta...quelli sono stati fatti a mano libera con il bisturi osservando altre torte in rete,,, www.ildolceloportoio.it<br />
Per le palme ho utilizzato bastoncini di legno a cui ho attaccato con la guttaperca i fili di metallo (per fiori di pdz) che erano dentro la foglie verdi, poi ho coperto con la pdz marrone...<br />

ecco la ricetta:<br />
Muffin cocco e nocciole<br />
200 gr di farina<br />
75 gr di nocciole tostate e tritare<br />
75 di cocco tritato<br />
3 cucchiaini di lievito per dolci<br />
2 uova<br />
200 gr di panna acida<br />
50 gr di latte<br />
2 cucchiai di rhum<br />
125 gr di zucchero<br />
80 ml burro fuso<br />
Mescolate le componenti secche, intanto mescolate i liquidi. e poi aggiungete le farine, mettete nei pirottini fino ai 3/4, mettere in forno a 180° per 25 minuti.<br />

Il frosting al philadelphia <br />
200 gr di philadelphia<br />
200 gr di panna<br />
50 gr di zucchero a velo<br />
montate il philadelphia con lo zucchero e poi aggiungete la panna montata.<br />

(anche se io li congelo...ma perchè in 2 non arrivi mai a finirli!!!)<br />...si potrebbero benissimo farcire con del frosting al philadelphia...<br />200 g di albumi a temperatura ambiente (6 albumi circa)<br />250 g di zucchero<br />250 g di farina 00<br />50 g di fecola<br />150 g di burro morbido<br />180 ml di latte <br />estratto di vaniglia<br />1/2 bustina di lievito<br />3 cucchiai di cacao amaro<br />Scalldare appena gli albumi con 2 cucchiai (presi dalla dose di zucchero) e il pizzico di sale, montarli e metterli da parte.<br />Montare il burro con il resto dello zucchero, aggiungere il latte alternandolo alle polveri (farina+amido+lievito), aggiungere l'estratto. Infine aggiungere gli albumi montati dal basso verso l'alto.<br />Dividere i due composti e aggiungere a uno dei due il cacao setacciato. Metterli nelle sac a poche e spremere il contenuto, alternando i 2 colori concentricamente...<br />(si può anche fare tranquillamente nello stampo da torta o in quello da ciambellone..)<br />In forno a 160° per 30-40° dipende dal forno e dalle teglie che usate.<br />

..La torta che le ho fatto è molto delicata e devo dire la verità, mi è piaciuto molto realizzarla!</div>

...Si tratta di una torta a 2 piani, quello più grande decorato con ruffles (o volant...non so precisamente come chiamarli) ...quello più piccolo con violette...tutte fatte a mano..una ad una..</div>
